Ingredients:
Egg-less Cookie Dough Filling:
1.5 cup all purpose flour
1/4 tsp. baking soda
1/4 tsp. salt
8 T. unsalted butter (1 stick)
4 T. granulated white sugar
4 T. milk
2 tsp. vanilla extract
1 cup mini chocolate chips (I used semi sweet)
Cupcake:
Oreos (split in half..use cream sides only…eat other side)
1 box of White Cake Mix
3 eggs
1/3 cup oil
1 cup milk
3/4 cup sour cream
1 T. vanilla extract
Chocolate Buttercream Frosting:
2 cups unsalted butter, softened (4 sticks)
6 cups powdered sugar
1 cup unsweetened cocoa powder
1 tsp. table salt
4 tsp vanilla extract
8 T. heavy cream
Directions:
Cookie Dough Filling:
Combine all the ingredients in a stand mixer except the chocolate chips.
Beat until smooth.
Fold in the chocolate chips.
Add more flour if needed to thicken (I didn’t have to do this, but you might have to).
Refrigerate the cookie dough for 15-30 minutes or until firm.
Once the dough is firm, Scoop out about 1 T. and roll into small balls. Place on cookie sheet. Put cookie dough (on the cookie sheet) into the freezer for at least 30 minutes).
While cookie dough is freezing, preheat oven to 350°F & line cupcake pan with liners.
Place oreos cream side up on the bottom of each liner.
Sift the cake mix in a small bowl.
In a large bowl, use a whisk to combine the eggs, oil, milk, sour cream and vanilla extract.
Add cake mix and stir until smooth.
Fill cupcake liners over oreo halves about 3/4 full.
Drop a frozen cookie dough ball in the center of each cupcake.
Bake for 20-25 minutes or until a toothpick inserted into cupcake portion comes out fairly clean.
Let cool.
Frosting:
Beat butter for 2 minutes.
Add cocoa, salt, vanilla and heavy cream.
Scrape down the side of the bowl as needed.
Slowly add the powdered sugar (1 cup at a time). Make sure to start your mixer off slow until the powdered sugar is somewhat incorporated.
Keep adding the sugar until you reach the desired consistency for your frosting.
Add a little more heavy cream if your frosting gets too thick.
Once the cupcakes have cooled, frost them.
Makes 24 cupcakes.

Okay these look amazingly delicious! I love cookie dough ice cream, but won’t come anywhere near actual cookie dough because the raw eggs gross me out so this sounds like the perfect way to incorporate into a cute little cupcake!
